A simple, yet sophisticated, way of eating your vegetables! For many, eating raw tomatoes and basil can be a nasty challenge. However, this recipe will teach you that with a little mozzarella and seasoning, tomatoes and basil can actually be quite tasty!

1 pound mozzarella log
2 large vine-ripe tomatoes
15-20 fresh basil leaves
Gather all ingredients.
Slice mozzarella and tomatoes into slices that are less than a quarter inch thick.
Alternate the tomato and mozzarella slices to form a large outer ring. Use the basil to create an inner ring. Let the leaves overlap and point outwards. Finally, place a mozzarella slice and tomato slice in the center of the inner ring.
Drizzle with olive oil. Sprinkle salt and black pepper to taste.
