3/4 cup pumpkin cubes
6 tablespoons sugar, divided
1/2 cup flour
1/2 teaspoon baking power
Pinch of salt
1/4 cup milk
2 tablespoons vegetable oil
1/2 cup walnut bits (optional)
Gather all ingredients.
Preheat oven to 350°F.
Cut pumpkin into small pieces (around 1 cm by 1 cm by 1 cm cubes). Put them into a microwave safe container. Add a little bit of water and mix in 3 tablespoons of sugar. Microwave with a cover on the container for 5 minutes. Be careful when taking the container out as it is very hot.
In a separate bowl, mix flour, baking powder, and salt together. Set dry ingredients aside.
In another bowl, mix eggs, milk, and oil together.
Add pumpkin cubes into the egg, oil, and milk mixture. However, be gentle enough as to not mash up the cubes too much.
Mix all the the dry ingredient mixture to the mixture with the pumpkin and wet ingredients. Mix quickly.
Grease the baking container with oil. Pour the batter into the container.
Sprinkle 3 tablespoons of sugar and the walnut bits evenly on top of the batter.
