A healthier take on cornbread! Greek yogurt has once again come to help cut the fat and oils out of your favorite foods! This cornbread has almost no fat or oil yet is still super moist and delicious!
Prep time: 30 min | Inactive time: 0 min | Cook time: 20 min | # of servings: 9 pieces Ingredients
1 cup cornmeal (use fine grind cornmeal for a less gritty texture)
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup sugar
1 teaspoon baking soda
3/4 teaspoon salt
1 cup nonfat plain Greek yogurt
2 eggs, beaten
Gather all ingredients.
Preheat oven to 400˚F. Lightly grease an 8 inch by 8 inch baking pan with vegetable oil.
In a large bowl, mix cornmeal, both flours,sugar baking soda, and salt. Stir in yogurt and eggs. Only stir until the batter is well-blended and be careful not to over mix. Pour batter into greased pan.
Bake between 20-25 minutes at 400˚F or until center of bread springs back when gently pressed.
