Prep time: 30 min | Inactive time: 40 min |Cook time: 15 min | # of servings: 15 pieces Ingredients Dough
1 cup flour
1 tablespoon sugar
1/4 teaspoon salt
1/4 cup butter, cold
2-4 tablespoons cold water
1 1/2 teaspoons starch
1 teaspoon water
1/4 cup jam of your choice
Gather all ingredients.
Combine flour, sugar, and salt in a large bowl.
Cut butter into small cubes. Gently toss the butter in your flour mixture and then cut in the butter into the flour. If you are using two knives, take a knife in each hand and "cut" your butter and flour by making cutting motions in opposite directions. Do so until the butter cubes are about pea sized.
Add cold water 1 tablespoon at a time and mix the dough with your fingers until it is smooth.
Wrap dough with plastic and refrigerate for at least 30 minutes, at most two days.
For the filling, stir together starch and the 1 teaspoon of water. Add jam and mix until combined. Store in refrigerator until ready to use.
Preheat oven to 375˚F. Line a baking sheet with a silicone mat or parchment paper. On a well-floured surface, roll out your dough until its is 1/8 inches thick. Cut your dough into small squares, roughly 1.5 inches x 1.5 inches. Spoon a teaspoon of filling onto a dough square, then place another square on top. Press dough around jam filling.
Arrange jam pocket on the baking sheet and freeze for 10 minutes.
Brush tops with milk and sprinkle sugar on top. Bake for 14-15 minutes at 375˚F.
