Being roasted is now a good thing! Even though these potatoes were featured as a component of the One-Pan Salmon recipe, we thought these potatoes had to be the stars of their own recipe because they were just so good!

1 1/2 pounds small potatoes
2 tablespoons olive oil
1 teaspoon lemon juice (optional)
1 clove garlic, minced
1 tablespoon fresh thyme
Gather all ingredients.
Preheat oven to 400˚F.
Cover a sheet pan with aluminum foil and grease with vegetable oil.
Slice potatoes into two halves. Rinse, peel, and remove potato eyes if necessary.
Place potato halves on sheet pan and drizzle with 2 tablespoons of olive oil and 1 teaspoon of lemon juice. Season with 1 clove of minced garlic, 1 tablespoon of fresh thyme. Add salt and pepper to taste.
Place in oven and bake for 15 minutes at 400˚F. Flip potatoes and bake for another 10 minutes.
